Texas Pecan Pie Bars This recipe is a bar cookie recipe. It is quite simple to do, and will go to any great party. You can serve on a platter or dish Nice service if you wish. The bonus to this recipe is that they can also be served on napkins if you want, they are a hand held spray if you wish.
First, the tart:
1 ½ stick butter
2 cups all purpose flour
½ cup light brown sugar
½ tsp teaspoon salt
Preheat oven to 350F degrees. You combine all ingredients in a food processor and mix. You will stop mixing when the mixture starts to become small crumbs. If you do not have a food processor, you can us a hand blender. You then add the mixture to the batter in a non-greased 12 by 12 inch baking pan, and press the dough into the pan until it is uniform and flat. You cook for about 10 minutes and turn 180 degrees and then about another 10 minutes until browned, about 20 minutes to the total. I would check when cooking just to make sure it does not get overcooked.
While your crust cooking you want to start your Texas Pecan Filling:
2 cups shelled pecans crushed
1 stick unsalted butter
1 cup packed light brown sugar
1 / 3 of Karo syrup
First, if you have not crushed pecans or floor, you'll need to grind in a food processor or by hand. In a saucepan, melt butter, then add brown sugar, Karo syrup. Bring mixture to a boil, stirring often and cook for about 2 to 3 minutes. You will begin to move in the pecans, and ensure they are fully covered with this sweet mixture. Take pan off heat. When the crust is ready, pour the pecans on top, and make sure it is evenly distributed. Then, bake the pecan pie bars for about 20 to 25 minutes.
Make sure that the bars of Texas pecan pie is completely cool, it's a necessity, before cutting them into pieces of about 24. If they do not cool the liquid will flow and the bar will be dry.
